FAIRTRADE BRAZIL AND CHOCOLATE MUFFINS

  • 150g (6oz) self raising flour
  • 80g (3oz) Fairtrade sugar
  • 1 teaspoon (tsp) baking powder
  • 1tsp bicarbonate of soda
  • 100g (4oz) Fairtrade brazil nuts, chopped
  • 100g (4oz) Fairtrade chocolate, chopped
  • 2 eggs
  • 100g (4oz) melted butter or margarine
  • 200 m (6 fl oz) milk

Sieve the dry ingredients together and add the nuts and chocolate. In a separate bowl, beat the eggs and add the melted butter and milk. Add the liquid ingredients to the dry ones and mix as quickly as possible. It doesn’t matter if there are some lumps. Fill the well-greased muffin tins two-thirds full and place in a preheated oven for 20-25 minutes at 200° C.

FAIRTRADE PEANUT COOKIES

  • 150g (6oz) self raising flour
  • 75g (3oz) margarine or butter
  • 75g (3oz) Fairtrade sugar
  • 1 egg
  • 100g (4oz) Fairtrade salted peanuts, chopped or whole as preferred
  • Milk to mix

Mix together the flour, butter or margarine, sugar and 75g (3oz) of peanuts. Add the egg and enough milk to make a stiff mixture. Put spoonfuls on a lined or well-greased baking sheet and flatten slightly. They will spread while cooking.

Sprinkle the rest of nuts on top.

Bake in a pre-heated oven for 15-20 minutes until pale brown.
